using a ton of fuel and exhaust is hotter than I think it should be

just finished this L92 (6.2 from 08 escalade) with stock internals cold intake and 2.5" Y pipe with dual cats and single 3.5" exhaust with 14 inch magnaflow, swap into a jeep wrangler and got the exhaust ran. I feel its using more fuel than it should and the exhaust is getting hotter than it should to. I'm as green as they come when it comes to HP tuners and reading logs, but I did a short log to post so I hope that helps give an idea what is going on. I can post more files and logs as needed. I appreciate in advance any help I can get.Base-6.2-6L80-TUNE-1 base tune (Copy).hptgold warmed up.hpl

Log shows it in closed loop, the O2s are switching, and trims are working so I don't see how it would be possible for it to be 'using too much fuel'. Trims will bring it back to stoich, it can only be leaner than stoich or richer when it's in open loop and no fuel corrections are being made. Log also shows spark timing in the normal range. Can you give any real data (rather than 'feels like' and 'seems') about fueling or exhaust temperatures?

here is a longer log nothing interesting just ez drive to work in traffic
my temp gun was difficult to get a good reading on the stainless pipes but at idle after a drive the gun was showing around 600 at collectors 525 pre cat, 625 post cat, around 500 pre muffler and around 550 exhaust fumes

(that's not the correct layout that matches your VVE, but just a general 'how things work' deal)

It's always going to smell bad without cats on it. There are things you can do to improve that but honestly you're still at the 'how do I turn it on?' stage, getting into injector timing would probably melt your brains right out your earholes.

What are the header tube temps? None of that is excessively high.

When I say header tube temps I mean up at the cylinder head.

By the exhaust temps it has functional cats.

But downstream O2 & cat codes have been turned off? Are they aftermarket/universal cats or the OE y-pipe?

I have 2 brand new Magnaflow cats. and no bad exhaust smell just all the hand prints and grease stuff burning in.

I will try to get those cylinder header temps this evening my gun was saying like 350 and 400 in that area so I know it was not correct, but they are shiny stainless steel and I think that is not letting me get a correct reading with that type of temp gun

Aftermarket or "high flow" cats usually have a 100 degree temp increase roughly. Factory cats are 200+ degrees.

The fuel trims could be closer. You could sneak some timing in the main spark table. I'm not sure what type of transmission but if it isn't optimized to stay locked up in the highest gear possible.. you could loose a couple MPG.

But nothing stands out to me to show poor mileage. Things are within limits i'd say.
